Usually, for a not too fatty pork stew, I choose a defatted pork leg. It also goes from the back, with the mention that this piece is more stuffy and the fatter stew will come out. By no means do I want to convey that I recommend for the mother to be inactive from pork tenderloin or from the chop, which is suitable for other dishes and other cooking methods. Stir to flavor the meat, put the potatoes and about 1 liter of warm water, cover and simmer until the potatoes are cooked.

At the end we add the chopped parsley.

How do we prepare potato stew?

Peel the potatoes and cut them into cubes. We clean the onion and finely chop it.

In a larger saucepan or pan, heat a little oil and add the onion. Heat it a little, then add the potatoes and leave it for another 2-3 minutes, stirring from time to time. Add the paprika, mix well and then add about 150 ml of water until the potatoes are covered by three quarters. The idea is not to put too much water. Season with salt, add the bay leaf and simmer on low heat for 10 minutes. Add the broth and leave for another 10 minutes depending on the potatoes.

When they are cooked, season with fresh pepper, I add a little oregano.

If you have too much sauce, crush a small part of the potatoes with a fork, they contain starch and the sauce will thicken. My grandfather used to do that, that's what I do now. Of course there is the version of the flour sauce but I don't like it.

It goes best with pickles in my opinion, but if it's summer you can make a vegetable salad.
