  • 40 gr. - Grated Parmesan cheese
  • 1 twig - fresh rosemary (finely chopped)
  • 2 cloves minced garlic
  • 80 ml. - olive oil
  • 1 teaspoon - sweet pepper powder
  • 1 teaspoon - dried oregano
  • 1 teaspoon - salt
  • Black pepper
  • 150 gr. - cheese of any kind

Method of preparation:

  1. Put the grated Parmesan cheese, sweet pepper powder, dried oregano, finely chopped rosemary, chopped garlic, salt, pepper and pour over the olive oil.
  2. Mix everything together and then take care of the potatoes.
  3. Take a well-washed or peeled potato and cut it into thin slices so that you don't reach the end.
  4. Place the potatoes on a baking tray lined with aluminum foil and fill each cut with the mixture prepared earlier.
  5. Cover the potatoes with aluminum foil and bake them in the preheated oven at 190 degrees C for about 35-40 minutes.
  6. Then take them out of the oven, remove the foil and put small slices of cheese between the cuts and then grease them on top with the remaining oil mixture.
  7. Return the potatoes to the preheated oven at the same temperature and bake for another 20-25 minutes or until nicely browned on top. Good appetite!

"Accordion" potatoes - a simple, impactful recipe

"Accordion potatoes" are a unique way to turn these common vegetables into one prepared with a special look, suitable for guests.

Their name comes from the fact that the way they are cut makes them look like an accordion. The recipe is very simple, and with a strong visual impact. It can be enriched, according to taste and preference, with other ingredients, such as cheese, ham, etc.

The amount of ingredients is not fixed, because it depends on how many potatoes you use and the number of people you want to prepare this recipe for.

Look for a tall baking tray that can hold the potatoes you want to bake, 4-5 large potatoes, or even more.

After you have peeled them and washed them well, put them on a wooden bottom and start cutting each potato into slices, three quarters down, without touching the base with the knife and without cutting them. all.

Then put the potatoes in a bowl or large bowl, and add a little olive oil, salt, pepper, paprika and other spices, to taste (ginger, rosemary, thyme, dill, parsley, oregano, etc.). Mix with your hands to grease the potatoes everywhere with oil and spices.

Place the potatoes in the pan and sprinkle them with a little olive oil at the end. You can insert pieces of tomatoes or bell peppers between the slices, as in the picture.

  • 2 kg of medium potatoes
  • 100 ml vegetable oil
  • 1 bunch of parsley
  • Grated peel of a lemon
  • 1-2 cloves of garlic, depending on how much you like
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chilli flakes - optional.

Method of preparation

  • Preheat the oven to 180 degrees Celsius.
  • Peel the potatoes and wash them.
  • Cut the potatoes into slices with a sharp knife and a very thin blade, so that we leave half a centimeter at its base.
  • Put the potatoes with the cut side up, in a tray lined with baking paper and grease them with oil. Add more salt and bake for 55-60 minutes or until cooked through. From time to time, with the help of a brush, we grease them with the oil from the tray.
  • In a bowl we put the lemon peel, the paprika, the finely chopped garlic, the finely chopped parsley, the pepper and the cell flakes, if we have chosen to make them spicy. We mix.
  • After the potatoes are baked, sprinkle the composition with greens and grease them again with the oil in the pan, then leave them for another 5 minutes.

Accordion potatoes, other combinations of ingredients

If it is not a fasting day, these wonderful potatoes can be made with butter, instead of oil and seasoned with cheese, cheese, bacon, smoked ham.

Ingredients for 4 servings:

  • 1 kg of potatoes
  • 50 g butter
  • 2 tablespoons fresh or dried rosemary
  • 2 tablespoons fresh or dried thyme
  • 2 cloves of crushed garlic
  • salt to taste.

Method of preparation:

  1. First of all, preheat the oven to 200 degrees Celsius. In a saucepan, melt the butter over low heat. As soon as it has softened, add the finely chopped herbs and garlic to it, then let it simmer for another 5 minutes.
  2. Peel the potatoes, wash them well and decide how to place them in the pan. Choose the part you will put in the tray and cut a strip so that you flatten the base of the potato, so that it fits well in the tray. On top of the potato, with a knife with a thin blade, you will make 2 in 2 mm small notches deep enough.
  3. Place the potatoes in the tray lined with baking paper, side by side. Season with salt to taste. Grease them with half the mixture of melted butter and herbs, then put them in the oven for an hour. Check, with the help of a fork, if they are baked well enough. If the fork does not easily penetrate the potatoes, it means that they must be left in the oven. During baking, you will open the oven from time to time to grease the potatoes with the remaining mixture of butter and herbs.

Accordion potatoes are served as soon as they are taken out of the oven, because then they are crispy on the surface and soft on the inside. They can be served as such, along with a lettuce, but also as a side dish next to a roast in the oven or even on the grill.

If you want to serve these potatoes as a stand-alone type, you could try the accordion potato variant with Bechamel sauce, extremely tasty and with a grade 10 look.

2. Cut the bacon and cheese into thin slices. Better use cheese with a strong taste that melts well, for example, Dutch.

3. Place the bacon and hard cheese in succession slices.

4. Season each potato with salt. You can also sprinkle potatoes with herbs: oregano or basil. You can also put garlic powder for a more spicy taste. Put the butter pieces on each accordion potato and wrap them in foil. The butter will melt and soak into the potatoes, giving them a delicious and tender taste.

5. Place the potatoes in the preheated oven at 200 degrees for one hour. Take the toothpick test. The toothpick should fit easily into the potatoes.

6. Unwrap the foil and sprinkle the baked potatoes with grated cheese and chopped greens.

7. If you go on a picnic, prepare these potatoes on coals, you will get very tasty potatoes, and the smell of smoke will accentuate the delicacy of the potato core.
