Baked quinoa risotto with Delikat - Spices for sarmale and Provolone cheese

Preheat the oven to 180 degrees Celsius.

Chop pancetta, onion, finely chopped garlic and diced pepper.

In a double-bottomed pot, heat a little olive oil and fry the pancetta until crispy, 5 minutes. Add onion, garlic and pepper and sauté for another 5 minutes. Add the minced meat and spices for the sarmale, adjust the heat to medium to high and leave for 3 minutes, without stirring. Then mix well and leave for another 5 minutes, stirring occasionally. Add the tomatoes in the broth, the tomato paste and the milk, bring to the boil, reduce the heat to medium to low and leave for 15-20 minutes, until it becomes a creamy sauce. Add salt and pepper to taste.

Meanwhile, heat 600 ml of chicken soup in a large (cast iron) pan. Then add the rice mixture, cover with a lid and cook over medium to low heat for 15 minutes. After the time expires, add the rest of the soup, Parmesan cheese and wine. Stir vigorously for a few minutes, until creamy. At the end, add salt and pepper to taste.

Using a spatula, spread the risotto evenly, then pour the meat sauce previously obtained on top. Add the Provolone cheese in an even layer over the entire surface, then transfer the pan to the oven, where it will remain for 15 minutes.

Sprinkle with fresh basil / parsley leaves and eat immediately.
